Ceasar Salad Crostini's
These Caesar salad crostini's make a great appetizer and they are easy to make! They are made using our mild EVOO and our Garlic Infused olive oil as well!

Crisp, garlicky crostini piled with a bright Caesar-dressed romaine: this is the appetizer that disappears first. A homemade dressing built on our Garlic Infused Olive Oil brings the savory, emulsified richness that makes a Caesar sing.
Ingredient Spotlight. Our Garlic Infused Olive Oil is the backbone of this dressing, whisking into a silky, garlic-forward emulsion that clings to every leaf. A mild extra virgin olive oil for toasting the baguette keeps the base clean and buttery.
Ingredients
Crostini:
- 1 Baguette - sliced 1/4 inch thick
- 3/4 cup of Mild Extra Virgin Olive Oil- such as NCOO Chiquitita
Salad Dressing:
- 1/2 cup NCOO Garlic Infused Olive Oil
- 1/4 cup finely grated Parmesan cheese
- Kosher salt and freshly ground black pepper
- 1 egg yolk
- 1 tablespoon juice fromNCOO Garlic Infused Olive Oillemon
- 4 anchovies
- 1 teaspoon Worcestershire sauce
Salad:
- 2 thinly chopped Romaine lettuce hearts
Instructions
- Drizzle Extra Virgin Olive Oil on baguette slices and toast in the oven until golden brown. - Set aside
- Make Salad Dressing: Combine egg yolk, lemon juice, anchovies, Worcestershire sauce and 1/4 cup Parmesan cheese in the in a blender jar or container of a food processor and pulse to combine. With the processor running slowly drizzle in the garlic olive oil until a smooth emulsion forms. Season to taste generously with salt and pepper.
- Toss your chopped romaine lettuce hearts in the Caesar dressing and top your baguette. Shave fresh Parmesan cheese and serve.
Chef's Notes
- With the food processor running, add the garlic olive oil in a slow, steady stream. That gradual pour is what gives you a thick, glossy emulsion instead of a broken dressing.
- Toast the baguette slices just until golden so they stay crisp under the dressed greens rather than turning soft.
Make It Yours
- Dress the crostini right before serving, or set the toasts and dressing out separately so guests can build their own and keep every bite crunchy.
- For a peppery twist, finish each crostini with a light drizzle of our Garlic Infused Olive Oil and an extra shave of Parmesan.
