Macerated Strawberries with Vanilla & Strawberry Dark Balsamic

There's no simpler way to turn a basket of ripe strawberries into dessert. A splash of balsamic and a little sugar draw out the berries' juices into a glossy, syrupy macerate that's ready to spoon over anything from goat cheese to vanilla ice cream.

Ingredient Spotlight. Two dark balsamics do the work here. Our Strawberry Dark Balsamic deepens the fresh-berry flavor with a jammy sweetness, while our Vanilla Dark Balsamic rounds it all out with a warm, mellow finish.

Instructions

  1. Place sliced strawberries in a large bowl.
  2. Mix the sugar and balsamics together in a seperate bowl.
  3. Pour balsamic/sugar mixture over the strawberries and mix well. Cover the mixture and let macerate for 6 hours, stirring occasionally. Serve over goat cheese if you like.

Chef's Notes

  • Give the berries the full rest. Those hours in the fridge are what pull the juices into a silky syrup, so stir occasionally and don't rush it.
  • Taste before adding all the sugar. Very ripe berries need less, and the balsamics already bring their own sweetness.
