It is really starting to feel like summer, especially today! Cool off with this tasty & healthy smoothie. This particular olive oil is especially good for you as it has a very high content of all those good antioxidant compounds that reduce the risk of heart disease and other degenerative diseases.

Ingredient Spotlight. Our Strawberry Dark Balsamic Vinegar is what makes this smoothie sing, lending a jammy, bright sweetness that softens the earthy kale and lets the blueberries shine. A short soak with the chia seeds coaxes out even more of its ripe berry character.

Ingredients

  • 2 cups frozen blueberries
  • 1/3 cup Strawberry Dark Balsamic Vinegar
  • 1 fresh banana, cut up
  • 1 cup packed fresh baby kale
  • 1/4 cup Melgarejo Hojiblanca Extra Virgin Olive Oil
  • 2 Tablespoons chia seeds

Instructions

  1. Soak the chia seeds in 1/3 cup Strawberry Dark Balsamic Vinegar for at least 20 minutes prior to making the recipe.
  2. Add the soaked chia seeds, olive oil and banana to the blender jar and blend to a smooth consistency.
  3. Add the baby kale and frozen blueberries to the jar and process until completely smooth.

Chef's Notes

  • Give the chia seeds their full soak. That rest hydrates them into a gel, so the smoothie blends up silky instead of gritty.
  • Start the blender with the wet ingredients and banana, then add the kale and frozen fruit. Building it in that order gives you the smoothest pour.

Make It Yours

  • Swap the frozen blueberries for frozen mixed berries or cherries, or trade the kale for baby spinach for a milder green.
  • For a tropical twist, use our Coconut White Balsamic Vinegar in place of the strawberry.
