Savory Herb-Crusted Salmon with Citrus Balsamic Drizzle

This herb-crusted salmon is a celebration of fresh flavors combined with aromatic spices. Paired with a zesty citrus balsamic drizzle, it transforms an ordinary dinner into a gourmet experience.
Using Basil Infused Olive Oil and a splash of Blackberry Ginger Dark Balsamic Vinegar elevates this dish to new heights, enhancing the salmon’s natural flavors.
  • 4 salmon fillets (170g each)
  • 2 tablespoons Basil Infused Olive Oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons Dijon mustard
  • 1 cup breadcrumbs (panko preferred)
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 tablespoon fresh parsley, chopped
  • Juice and zest of 1 lemon
  • 2 tablespoons Blackberry Ginger Dark Balsamic Vinegar
  • Zest of 1 orange
  • Fresh herbs for garnish
  • Baking sheet
  • Mixing bowls
  • Whisk
  • Offset spatula
  • Salmon: Can substitute with trout or tilapia.
  • Basil Infused Olive Oil: Use regular olive oil with fresh basil for similar flavor.
  • Blackberry Ginger Dark Balsamic Vinegar: Swap for any fruity balsamic vinegar.
  1. Preheat your oven to 200°C (400°F).
  2. In a small bowl, mix the breadcrumbs, oregano, thyme, salt, black pepper, lemon zest, and parsley.
  3. Spread the Basil Infused Olive Oil over the salmon fillets using an offset spatula.
  4. Brush each fillet with Dijon mustard for added flavor.
  5. Evenly coat the top of each salmon fillet with the breadcrumb mixture.
  6. Place the salmon fillets on a lined baking sheet and bake for 12-15 minutes, or until the fish flakes easily with a fork.
  7. While the salmon bakes, prepare the drizzle by mixing Blackberry Ginger Dark Balsamic Vinegar, orange zest, and lemon juice in a small bowl.
  8. Once baked, drizzle the salmon with the balsamic mix and garnish with fresh herbs.

For a make-ahead option, prepare the breadcrumb mixture and store it in the refrigerator for up to 2 days. Just coat the salmon fillets then bake when ready to serve.

This dish pairs beautifully with roasted vegetables or a light salad, balancing the richness of the salmon with fresh, vibrant flavors.
